BAKED SEAFOOD MAC

Ingredients:

  • 2 tbsp. olive oil
  • 2 tbsp. garlic
  • 4 oz. salmon pieces
  • 4 oz. snapper pieces
  • 1 cup heavy cream
  • ¼ cup extra sharp cheddar cheese (grated)
  • ¼ cup Monterey Jack cheese (grated)
  • 2 slices American cheese
  • 3 cups Penne pasta (cooked)
  • ¼ cup Panko bread crumbs
  • Directions:

    Preheat oven to 400 degrees.

    In hot sauté pan, sauté garlic, salmon and snapper pieces until fish is nearly done. Add heavy cream and bring to a boil. Reduce heat and simmer to reduce cream by half. Add two whole slices American cheese and stir gently. Add cheddar and Monterey Jack cheeses stirring gently. Add cooked Penne pasta and toss in pan to coat pasta and use salt and pepper to taste. Top with Panko bread crumbs and bake at 400 degrees until Panko is golden brown. Serve immediately with really good garlic bread!
